MEXICAN CHICKEN

6 boneless, skinless chicken breasts
2 tbsp olive oil
2 cans cream of chicken soup
2 cans water
1/2 packet taco seasoning mix
1 cup shredded sharp cheddar cheese
1 small bag plain tortilla chips

Warm olive oil in a large skillet over medium heat and brown chicken breasts for about 8-10 minutes on each side. Combine soup, water, seasoning mix and 1/2 the cheese in a large mixing bowl.

Place the browned chicken in a 13x9 inch baking pan and pour the soup mixture over the chicken. Crumble chips in their bag and spread over chicken. Bake, uncovered, at 350 for 45 minutes. Sprinkle with remaining cheese over chips and continue to bake until cheese is melted.
