1 (4 oz) can mushrooms, sliced and drained
1 tbsp butter
1/2 cup chopped green bell pepper and onion
2 stalks celery, chopped
1 tbsp flour
1/4 tsp salt
1/2 tsp pepper
1/8 tsp paprika
1/4 cup chicken broth
1 cup milk
1/4 cup half-and-half
2 cups chicken, cooked and cubed
1 (4 oz) jar pimentos
4 (10-12 inch) flour tortillas
Lightly saute mushrooms in a saucepan in butter. Add vegetables and saute until onions become translucent. Stir in flour and seasonings. While stirring, gradually add broth, milk and cream to saucepan. Cook over medium heat, stirring constantly until thickened. Add chicken and pimentos. Cook on low until completely heated through. Soften and warm tortillas. Fill each tortilla with chicken mixture; wrap and serve. Serves 4
