HONEY TERIYAKI CHICKEN

2 lbs boneless, skinless chicken breasts, cubed
1/2 cup flour
1/2 tsp salt
Dash pepper
2 eggs, beaten
Oil for frying

Glaze
1/3 cup soy sauce and honey
1 tsp ginger
1 tbsp sherry
1 clove garlic, minced
2 tbsp sesame seeds

Combine flour, salt and pepper. Dip chicken in eggs and coat with flour. Pour 1/2 inch oil in a skillet and place over medium heat. When oil is hot, cook chicken in batches, turning as needed, until chicken is golden brown. Remove and allow to drain, keeping warm.

Meanwhile, prepare glaze by combining first 5 ingredients for the glaze in a saucepan and heat to a simmer. Place cooked chicken in honey mixture and place on rack to set in a baking pan. Sprinkle with sesame seeds. Bake at 350 for 20 minutes, brushing with glaze after 10 minutes. Serve hot at room temperature.
