HERB MARINATED CHICKEN

Category: Poultry I

2 to 2 1/2 lbs chicken pieces
1/2 cup white wine
2 tbsp olive oil
1 tbsp vinegar
2 tsp dried basil, crushed
1 tsp dried oregano or tarragon, crushed
1/2 tsp onion salt
2 clove garlic, minced

Skin and rinse chicken; pat dry. Place in a resealable bag. Combine remaining ingredients for the marinade and pour over the chicken. Sea and turn to coat chicken. Marinate 5 to 24 hours in refrigerator, turning occasionally.

Drain chicken, reserving marinade. Prepare grill for medium heat and grill chicken over direct heat for 20 minutes, brushing occasionally with marinade. Turn and grill 15-25 minutes more or until tender and no longer pink, brushing with marinade.
