FIESTA CHICKEN BAKE

6 chicken legs and/or thighs (3 to 3 1/2 lb total)
1/2 cups chopped onion
1 tbsp cooking oil
1 (14 1/2 oz) can tomatoes, cut up
1 (8 3/4 oz) can corn, drained
1 (4 oz) can diced green chili peppers, drained
1 tsp chili powder
1/2 tsp paprika
1/4 tsp ground cumin
1/8 tsp pepper
Several dashes hot pepper sauce
1/2 cup shredded sharp cheddar cheese
2 tbsp sliced pitted olives
Hot cooked rice
Preheat oven to 375. Skin and rinse chicken; pat dry. Arrange in a baking dish. Bake for 30 minutes. Drain off fat.
Meanwhile, prepare sauce: In saucepan, cook onion in oil until onions are tender but not brown. Stir in next tomatoes, corn, peppers, seasonings and pepper sauce. Pour over chicken.
Bake for 20-30 minutes or until chicken is tender and no longer pink, basting occasionally with sauce. Sprinkle chicken with cheese and olives. Serve over cooked rice. Serves 6
