ANDOUILLE AND CHEESE APPETIZER BISCUITS

1/2 lb Andouille sausage
1/2 cup shredded Monterey jack cheese
1 1/2 cups biscuit mix

Preheat oven to 325. Remove the sausage from its casing. Mix well with other ingredients. Roll into 1 inch balls. Place on ungreased baking sheet. Bake for 18-20 minutes. Serve warm. Makes 3 dozen miniature biscuits.
