CHRISTMAS VEGETABLE SALAD

Dressing
1 1/2 tbsp lemon juice and white wine vinegar
4 tbsp vegetable oil
1 tsp salt
Pepper

Salad
2 cups thinly sliced cauliflower
1/2 cup sliced stuffed green olives
1/3 cup chopped green and red bell peppers

Whisk together dressing ingredients. Combine vegetables in a glass bowl and pour dressing over all. Marinate in refrigerator several hours or overnight.
