FETTUCCINE WITH CREAMY PESTO CHICKEN

12 oz fettuccine, cooked al dente
1 tbsp olive oil
1 lb boneless, skinless chicken breasts, cut into strips and seasoned with salt and pepper
1 (7 oz) jar roasted red pepper, drained and chopped
1 1/4 cups light cream
1/3 cup prepared pesto
1/2 tsp salt
Grated parmesan cheese
While pasta is cooking, in a large skillet; cook chicken in hot oil, stirring frequently, until the chicken is thoroughly cooked, about 5 minutes. Add roasted red pepper; cook 1 minute. Add cream and simmer until thickened, about 3 minutes. Remove from heat and stir in pesto and salt. Toss hot, drained pasta and sauce; sprinkle with cheese. Serves 8
