PASTA SHELLS AND CHICKEN

6 oz pasta shells, cooked al dente
1 1/4 lb fresh spinach
1 lb boneless, skinless chicken breasts, grilled and cut into 1 inch cubes
4 medium clove garlic, minced
1 tsp olive oil
1 cup chicken broth
1/2 tsp nutmeg
Salt and pepper
1/2 cup grated parmesan cheese

While pasta is cooking, cook spinach in broth until tender. Drain and reserve broth. Mash out excess liquid in the spinach.

Preheat a skillet and add oil. Saute garlic, stirring constantly, until it is white. Add spinach and seasonings. Add chicken pieces and stir. Add a small amount of cooking broth, stirring until spinach is hot, adding broth as necessary. Add drained shells to pasta mixture and blend well. Stir with parmesan cheese.
