1 tbsp olive oil
1 medium onion, sliced
4 medium potatoes, peeled and sliced
1 1/2 cup chicken broth
1 1/2 cups shredded fontina cheese

Heat oil in a skillet. Add onions and cook until soft. Add the potatoes and broth; stir well. Cook until potatoes are soft and most of the broth is absorbed. Top with cheese and place under the broiler until lightly browned. Serve warm. Serves 4-6
