BAKED TILAPIA WITH PARMESAN CRUMB TOPPING

2 lbs tilapia fillets or fish of choice
3/4 cup grated parmesan cheese
1/2 cup unseasoned bread crumbs
4 tbsp butter, melted
2 tbsp olive oil

Preheat oven to 425. Place fish in a large baking dish and season with salt and pepper. In a bowl, mix cheese and breadcrumbs. Add butter and oil, stirring until crumbly and moist. Sprinkle over fish and bake for 15 minutes or until fish is cooked and topping is golden. Let stand 5 minutes before serving. Serves 6
