Meatballs
1 1/2 lbs ground beef
1 1/2 tsp salt
1/8 tsp pepper
1 egg
1 tbsp minced onion
1/2 cup soft breadcrumbs

1 onion, coarsely chopped
1 1/2 lbs potatoes, peeled and diced
1/2 lbs carrots, peeled and diced
2 celery stalks, sliced
1 can stewed tomatoes, reserving liquid
1 tbsp corn oil
3 tbsp flour
1 cup water
1/2 tsp salt
2 tsp sugar
1 tsp crushed dried basil

Combine ingredients for meatballs and shape into balls about the size of walnuts. Brown quickly in hot oil and transfer to a casserole dish. Add vegetables. Blend flour into fat in skillet. Add reserved juice, and remaining ingredients. Bring mixture to a boil; simmer slowly for 10 minutes, adding water if necessary. Bake, covered, at 350, for 1 hour, or until vegetables are tender.
