HAM LOAF WITH GOLDEN SAUCE

1 lb ground fully cooked ham and ground pork
2 cups soft bread crumbs
1/3 cup pineapple juice
2 eggs, slightly beaten
1/2 cup chopped onion
1/4 cup packed brown sugar
1 tbsp parsley flakes
2 tbsp cider vinegar
1/4 tsp ground cloves

Sauce
2 cups pineapple juice
3 tbsp cornstarch
1-2 tbsp brown sugar
2 tsp lemon juice
1/4-1/2 tsp ground juice

In a bowl, combine first 10 ingredients. Pack into a loaf pan. Bake at 350 for 1 1/2 hours.

Meanwhile, combine sauce ingredients and slowly bring to a boil, stirring constantly until thickened and translucent. Allow loaf to stand for 5 minutes. Remove loaf pan and serve sauce over it.
