CONFETTI CHICKEN CASSEROLE

1 cup diced carrots
3/4 cup chopped onion
1/2 cup diced celery
1/4 cup chicken broth
1 can cream of chicken soup
1 cup sour cream
3 cups cubed cooked chicken
1/2 cup sliced mushrooms
1 tsp Worcestershire sauce and salt
1/8 tsp pepper

Topping
1 cup sifted flour
2 tsp baking powder
1/2 tsp salt
3 eggs, slightly beaten
1/2 cup milk
1 tbsp chopped green pepper and chopped pimiento
1 1/4 cup shredded cheddar cheese, divided

In a saucepan, combine first 4 ingredients and simmer for 20 minutes. In a 3-quart casserole, mix soup and remaining ingredients. Add simmered vegetables and liquid; mix well. Drop tbsp of topping onto casserole and bake at 350 for 40-45 minutes or until golden. Sprinkle with remaining cheese and return to oven until melted.

Topping: Combine dry ingredients. Add next 4 ingredients and 1 cup cheese. Mix until just blended
