SHRIMP AND SPINACH SALAD

1 lb prawns, peeled and butterflied

Dressing
1/4 cup dry sherry and rice vinegar
2 tbsp sesame oil
1/2 tsp dry ginger
2 tsp sugar
1 tsp soy sauce and grated orange peel

Salad
2 small oranges, peeled and cut into small pieces
3 1/2 quarts spinach
1 red pepper, cut into thin slivers
Sliced red onion

Combine dressing ingredients, reserving 2 tbsp to marinade shrimp. Toss shrimp with reserved dressing, cover in a bowl and marinade 30 minutes in the refrigerator.

In a large bowl, combine salad ingredients. Cover and chill until ready to put the salad together. Cook shrimp on grill or broil for about 3 minutes until opaque. Add dressing to salad and toss. Top with shrimp.
