VEGETABLE PIZZA

1/2 pkg frozen puff pastry sheet, thawed
2 tsp vegetable oil
1 cup chopped broccoli flowerets and mushrooms
1/2 cup chopped green or red bell pepper
1 small onion, chopped
3/4 cup spaghetti sauce
1 1/2 cups shredded mozzarella cheese

Preheat oven to 400. Unfold pastry on lightly floured surface. Roll into a 15x10 inch rectangle and place on baking sheet. Prick with a fork and bake for 10 minutes.

In a skillet, heat oil and add vegetables until tender-crisp. Spread sauce over crust to within 1/2 inch of edges. Top with vegetable mixture and sprinkle with chese. Bake 5 minutes or until cheese is melted. Cut into serving pieces.
