*FRIED CHICKEN COATING*

2 cups flour
1/4 cup paprika
2 tbsp salt and pepper
1 tbsp ground mustard and dried thyme
1 tsp ground ginger
1/2 tsp dried oregano

Combine well and store in an airtight container in a cool, dry placer up to 1 year.

NOTE: With making fried chicken, place about 3/4 cup coating in a large resealable bag. In a separate dish, dip chicken pieces in an egg mixture of 2 eggs and 1/2 cup milk. Dip into egg mixture and place in bage, seal and shake to coat. Brown chicken on all sides, remove to a greased 13x9 inch baking dish and bake, uncovered, at 350 for 50-60 minutes or until juices run clear. Serves 4
