HOLIDAY MORNING FRENCH TOAST

1 cup brown sugar
1/2 cup butter, melted
3 tsp cinnamon
3 apples, peeled, cored & thinly sliced
1/2 cup dried cranberries or raisins
1 loaf Italian bread, cut in 1 inch slices
6 large eggs
1 1/2 cups milk
1 tbsp vanilla

Combine brown sugar, butter and 1 tsp cinnamon in a 13x9 inch baking dish. Add apples and cranberries/raisins, toss to coat well. Spread mixture evenly over bottom of baking dish. Arrange slices of bread on top. Mix eggs, milk and vanilla together, with remaining 2 tsp cinnamon, until well blended. Pour over bread, soaking bread completely. Cover and refrigerate for 4 - 24 hours. Bake, covered with aluminum foil, in preheated 3750 oven, for 40 minutes. Remove cover and bake an additional 5 minutes. Remove from oven and allow to stand for 5 minutes. Serve warm.
