HERB CRUSTED HAM

1 (5 lb) boneless ham
2 tbsp dijon mustard
1/4 tsp pepper
1/2 tsp dried rosemary
1 1/2 cups fine dry breadcrumbs
1/2 cup chopped parsley
1 tbsp olive oil
1/2 tsp grated orange rind
1 tbsp orange juice
1 clove garlic, minced
In a bowl, combine mustard, pepper and rosemary. Rub over surface of ham. Toss together breadcrumbs and parsley. Whisk oil, orange rind, juice and garlic. Add to crumb mixture. Press crumbs onto mustard coated ham. Place in a roasting pan and bake at 325 for 1 hour. Serves 10-12
