GINGERED HONEY-GLAZED SPARERIBS

Marinade
1 cup honey
2/3 cup packed brown sugar
1/4 cup white vinegar
4 clove garlic, minced
3-4 tbsp Worcestershire sauce
1 tbsp grated ginger
1/4 tsp cayenne pepper, or to taste
2 tsp salt
2 rack pork spareribs, untrimmed, about 3 lbs each
In a saucepan, combine marinade ingredients and simmer, stirring, until sugar is dissolved, about 5 minutes. Cool to room temperature.
In a shallow baking dish, add the rib racks and top with marinadecompleteld coating. Cover and chill, turning occasionally, overnight.
Preheat oven to 350. Remove ribs from marinade and arrange in a large roasting pan.
In a saucepan, bring marinade to a boil, and simmer, uncovered, until reduced to 1 3/4 cups. Roast ribs, turning and basting with reduced marinade every 30 minutes, until very tender, 1 1/2 to 2 hours. When ribs are tender, transfer to cutting board and slice between bones into serving pieces. Spoon reduced glaze over ribs and serve.
