CREAM CHEESE SPINACH QUICHE

Pastry for 9 inch pie
1 tbsp butter
1/4 cup chopped onion
1 (8 oz) pkg cream cheese, cubed
3/4 cup milk
4 large eggs, lightly beaten
1 (10 oz) pkg frozen chopped spinach, thawed and well drained
1 (2 oz) jar pimiento, undrained
1/8 tsp pepper
Fit piecrust into a 9 inch quiche dish. Prick bottom and sides of piecrust with a fork. Bake at 425 for 10-12 minutes; set aside. Melt butter over medium heat; add onion, and cook until tender. Add cream cheese and milk to mixture in skillet; cook over low heat, whisking until cream cheese melts. Gradually whisk about one-fourth of hot mixture into eggs; add to remaining hot mixture, whisking constantly. Whisk in spinach, pimiento and pepper; pour into crust. Bake at 350 for 35 to 40 minutes or until set.
