BEEF AND NOODLE BAKE

6 oz medium egg noodles, cooked and drained
1 lb ground beef
1 cup sliced mushrooms
1/3 cup chopped onion
2 clove garlic, minced
1 (16 oz) can tomato sauce
1/2 tsp ground pepper
1/4 tsp salt
1 (12 oz) container cottage cheese
1 (8 oz) container sour cream
1/3 cup chopped onion
2 tbsp parmesan cheese
1 tbsp poppy seeds
3/4 cup shredded sharp cheddar cheese, divided

While pasta is cooking, brown first 4 ingrdinets in a skillet until meat is browned, stirring to crumble. Drain and pat dry with paper towel. Return mixture to skillet and add sauce, pepper and salt.

Combine cottage cheese and next 4 ingredients and stir into meat mixture, along with noodles and 1/3 cup cheese.

Coat a casserole with cooking spray. Place mixture in dish, cover and bake at 350 for 20 minutes. Uncover and sprinkle with remaining cheese and bake, covered, an additional 5 minutes.
