CAJUN PECAN CATFISH

1 lb catfish fillets
2 tbsp olive oil
1 tbsp Cajun seasoning
2 tbsp lemon juice
1 tsp thyme
1/3 cup finely chopped pecans
2 tbsp grated parmesan cheese
1 tbsp dry bread crumbs and dried parsley flakes

Preheat oven to 425. Coat a shallow baking dish with cooking spray and add the fish. Combine next 5 ingredients in a small bowl. Spoon half of the mixture over the fish.

Combine remaining ingredients to remaining oil mixture and spoon into fish and spread evenly. Bake 10-15 minutes or until fish flakes easily with a fork. Squeeze a little more lemon juice over the fish and serve.
