CAJUN FRIED RICE
Category: Rice/Risotto
1 cup converted rice
2 tbsp olive oil
2 tbsp tomato sauce or ketchup
1 tsp creole seasoning
1/2 tsp salt
1/2 lb diced smoked sausage and/or chicken
6 chopped green onions
1/2 cup diced celery and bell pepper
In a saucepan, saute the rice in the oil until brown. Add the sauce and seasonings to 2 cups water and bring to a boil. Reduce the heat to a low simmer and cook, covered, for 25 minutes. Remove from the heat and let rest for 5 minutes.
In a skillet, saute the sausage rendering some fat. Add the vegetables and a little oil if necessary. Saute until the sausage is crispy brown. Add the rice and fry until the dish is heated through and all the drippings are absorbed by the rice.
