FANTASY CHOCOLATE PIE

Pastry for a single-crust pie

Filling
3 eggs
1 cup light corn syrup
1/2 cup sugar
1/3 cup butter, melted
1 tsp vanilla extract
1/4 tsp salt
1/2 cup milk chocolate chip, semi-sweet chocolate chips and white chocolate chips
1 cup flaked coconut
1/2 cup pecan pieces and slivered almonds
Whipped cream and toasted coconut and/or chocolate curls

Place pastry into a 9 inch pie plate, crimping edges; set aside.

Filling: In a bowl, combine first 6 ingredients. In pastry shell, layer the chocolate pieces, coconut and nuts. Slowly pour egg mixture over all, allowing egg mixture to sink into filling. To prevent overbrowning, cover edge of pastry shell with foil.

Bake in the oven at 350 for 30 minutes. Remove the foil; bake for 20-25 minutes more, or until center of pie appears set when gently shaken. Cool completely on a wire rack. Cover and store in the refrigerate within 2 hours. Serve with whipped cream and sprinkle with coconut and/or chocolate curls.
