TOMATO-PESTO TURKEY

1 (3 to 3 1/2) lb bone-in turkey breast half
1/4 cup tomato pesto
3 tbsp snipped flat-leaf parsley
2 tbsp finely chopped walnuts or pecans
1/2 tsp dried rosemary, crushed
1/4 tsp salt and pepper
Coat a roasting pan with cooking spray and place breast portion, bone side down, on a rack in the pan. In a bowl, combine remaining ingredients and rub mixture under the skin over breast meat. Bake, uncovered, at 400 for 20 minutes. Reduce oven to 350 and roast for 1 1/4 to 1 1/2 hours, or until an inserted meat thermometer registers 170 and juices frun clear. Cover with foil during the last 30 to 45 minutes. Let stand, covered with foil, for 10 minutes before slicing. Serves 6 to 8
