CHOCOLATE CHIP BUTTERMILK MARBLE BUNDT CAKE

3 tbsp cocoa
Hot water, as required
1 cup unsalted butter, softened
2 cups sugar
4 eggs
2 1/2 tsp pure vanilla extract
1 1/2 cups buttermilk
2 3/4 tsp baking powder
1/4 tsp baking soda
3/8 tsp salt
3 cups flour
1/3 cup miniature chocolate chips (or minced regular ones)
Preheat the oven to 350. Spray a 12 cup Bundt pan very generously with nonstick cooking spray. Line a large baking sheet with parchment paper.
In a small bowl, whisk some hot water into the cocoa to make a smooth paste.
Cream the butter and sugar until lightly and fluffy. Blend in the eggs, then vanilla and the buttermilk, scraping the bottom of the bowl every so often to make sure it is evenly combined.
Fold in remaining ingredients. Remove 1/3 of the batter to another bowl and blend this with the chocolate paste.
Spoon vanilla, then chocolate, and finally dollops of more white batter into the prepared Bundt pan. Bake about 75 minutes or until cake is browned and springs back when gently touched.
Drizzle on melted chocolate before serving or simply dust with confectioner’s sugar.
