SWEET AND SOUR PORK RIBS

3 lbs pork spare ribs, cut into serving-size pieces

Sweet and Sour Sauce
1 cup apricot preserves
1 tbsp vinegar and lemon juice
2 tsp soy sauce

Combine sauce ingredients in a saucepan and stir until dissolved and combined. Use 1 cup for basting. Set remaining aside.

Place ribs meaty side down in a rectangle casserole dish. Bake at 425 for 1 hour or until tender. Place ribs on the grill over coals and cook for 10 minutes, turning once and basting with sweet and sour sauce. Serve with additional sauce.
