CITRUS CHIFFON PIE

Category: Pies - Cream and Custard

1 envelope unflavored gelatin
1/2 cup sugar
Salt, to taste
4 egg yolks
1/2 cup lemon and orange juices
1/4 cup water
1/2 tsp grated lemon and orange rinds
4 egg whites
1/3 cup sugar
1 (9 inch) baked pie crust
Whipped cream
Orange, sliced thin

Mix together first 3 ingredients in a saucepan. Beat together next 4 ingredients and stir into gelatin mixture. Cook over medium heat, stirring constantly, just until mixture comes to a boil. Remove from heat; stir in rinds. Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

Beat egg whites until soft peaks form. Gradually add sugar; beat until stiff peaks form. Fold in gelatin mixture. Pile onto cooled pie crust and chill until firm. Garnish with whipped cream and orange slices.
