CHOCOLATE TURTLE COOKIES

1/2 cup packed brown sugar and softened butter
2 tbsp water
1 tsp vanilla extract
1 1/2 cups flour
1/8 tsp salt
90 pecan halves
Caramels, cut in quarters

Chocolate glaze, recipe follows

Preheat oven to 350. Mix together first 3 ingredients. Stir in flour and salt until dough just holds together. If dough is too dry, stir in 1-2 tbsp water.

For each cookie, group 3 pecan halves on an ungreased cookie sheet, layer them at angles to each other. Take dough by teaspoonfuls and shap around a caramel piece; press firmly onto the center of each group of nuts. Bake until set but not brown, about 12-15 minutes. Cool. Dip cookies into chocolate glaze. Lay on wax paper and allow to set.

Glaze: Beat 1 cup confectioners sugar, 1 tsp water, 1 (1 oz) squares unsweetened chocolate, melted, and 1 tsp vanilla extract until smooth. If necessary, stir in water, 1 tsp at a time, until glaze is of dipping consistency.
