LEMONY NEW POTATOES

1 lb small new potatoes
1 tsp unsalted butter
1 tsp grated lemon zest
1 tbsp lemon juice
1 tbsp minced chives or scallions
Salt and pepper, to taste

Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 12-15 minutes or until potatoes are ender. Drain and rinse under cold water to cool slightly and peel skins.

Melt butter in a skillet. Add zest, juice and chives. Add potatoes and stir until potatoes are coated with mixture and heated through. Season with salt and pepper. Serves 4
