BAKED HADDOCK

1 lb haddock or cod fillets
1/4 cup lemon juice
1/2 tsp vegetable oil
2 clove garlic, minced
1/4 cup chicken broth
Pepper, to taste
4 large ushrooms, sliced
1 medium carrot, grated
2 tsp dried mint leaf
Preheat oven to 350. Rinse and pat dry fish. Place in a 9 inch square baking pan and add lemon juice; turning to coat fish. Marinate for 10 minutes.
In a skillet, heat oil and saute garlic. Spoon over fish and add remaining ingredients to casserole dish. Cover with foil and bake for 25-35 minutes, or until fish turns from translucent to opaque. Serve 4
