LEMON HERB ROATED CHICKEN

Category: Chicken

1/2 tsp black pepper, dried thyme, basil, and tarragon, crushed
1/4 tsp salt
4 to 4 1/2 lb roasting chicken, cleaned and patted dry with paper towels

2 medium cloves garlic, minced
1 lemon, cut into wedges
1 bay leaf
1/2 medium onion
1/2 cup dry white wine
Cooking spray

Preheat oven to 350. Spray chicken with cooking spray and rub herb mixture over and under the skin of the chicken. Place chicken on a roasting rack in a pan skin side up. Add garlic, lemon, bay leaf and onion in the cavity of the chiken and pour in the wine. Tie the drumsticks and fold under the wings. Bake about 20 minutes per pound or until juices run clear or meat thermometer registers 180 degrees. Remove from oven and let rest at least 15 minutes before carving. Serves 6
