IRISH CREAM CARAMELS

Category: Candy

2 cups whipping cream
1 cup sugar
1/2 cup light corn syrup
2 tsp butter
1 tsp Irish cream and vanilla extract
1/3 cup chopped walnuts

Combine first 4 ingredients in a saucepan. Using a candy thermometer, heat to 245 degrees, stirring constantly. Remove from heat at once. Stir in remaining ingredients and pour into a buttered 9 inch square baking pan. Cool just until firm. Loosen candy around edges with a knife; invert on cutting surface and cut into squares. Cool completely and wrap each in waxed paper. Store in a cool place.
