CHEESE-FRIED ZUCCHINI

3 cups zucchini, thinly sliced
1/4 cup dried bread crumbs
2 tbsp grated parmesan cheese
2 tbsp flour
1/2 tsp salt
1 beaten egg
4 tbsp oil

In plastic bag, combine crumbs, cheese, flour and salt. Dip zucchini in egg, then coat in crumb mixture. In pan, fry in hot oil until golden brown and crisp. Drain on paper towels. Serve immediately
