BONELESS PORK LOIN
Category: Pork I - Tenderloins and Roasts
1 (4 lb) boneless pork loin
9 cloves garlic
1/4 cup soy sauce and lime juice
4 crushed chili peppers
1/2 cup olive oil
Place pork in a resealable bag. In a food processor, add remaining ingredients and puls until blended. Pour over pork and marinate overnight. Remove roast from bag and pour marinade in a saucepan and cook until it boils.
Prepare grill for indirect heat in between a drip pan and add 2 or 3 soaked hickory wood chunks over coals. Grill roast, covered and basting occasionally with marinade, until done, about 3-4 hours.
