BAKED CATFISH WITH PECAN CRUST

4 (6 oz) catfish fillets
Salt and pepper, to taste
3/4 cup pecans
1 cup fresh breadcrumbs
2 tbsp butter, melted
1 tbsp Dijon mustard
1/2 cup grated parmesan cheese
1 tsp dried dill weed and parsley
Olive oil
Lemon wedges, garnish

Preheat oven to 375. Spray a 13x9 inch baking pan with nonstick cooking spray. Place fish in dish; sprinkle with salt and pepper. Grind pecans in food processor until finely chopped. Mix together pecans and breadcrumbs.

Add the next 5 ingredients; mix well until combined. Pat crumbs onto the top of the fillets and drizzle with olive oil. Bake until fish are done; about 15 minutes and the turn on the broil and place until the broiler until the crust had browned.
