CABBAGE CASSEROLE

5 cups coarsely chopped cabbage
2 tbsp butter
2 tbsp flour
1 1/4 cups mik
1/2 cup chopped yellow sweet bell pepper
1/2 cup shredded sharp cheddar cheese
1/4 cup chopped onion
4 cups prepared crumbled corn bread

In a saucepan, cook cabbage, covered, in a small amount of boiling water, lightly salted water for 5 minutes. Drain and set aside.

In the same pan, melt butter. Stir in four 1/2 tsp salt and 1/8 tsp pepper. Add milk, stirring constantly, until thickened and bubbly. Stir in next 3 ingredients and stir until cheese melts. Remove from heat.

Place 3 cups corn bread in a casserole dish. Top with cabbage, sauce, and remaining corn bread. Bake, uncovered, at 375 for 30 to 35 minutes or until heated through. Serves 8
