*ITALIAN CHICKEN AND POTATOES* – Crock pot

4 boneless, skinless chicken breasts
1 cup Italian salad dressing
2 tsp Italian seasoning
1 cup grated parmesan cheese
8 potatoes, peeled and cut into wedges
Place chicken in bottom of crock pot. Sprinkle with half dressing, spices and grated cheese. Top with potatoes and sprinkle with remaining ingredients. Cook on LOW for 6-8 hours.
NOTE: When it was done, I removed the chicken and potatoes. Stir-fried some vegetables (zucchini, baby carrots, onions, mushrooms, squash, red and yellow bell peppers) and added them to the potatoes. Put the broth in a saucepan and added a boullion cube and some white wine with fresh basil and heated it to a simmer. Mixed together 1 tbsp cornstarch and water and stirred into the broth mixture, stirring until thickened. Place some sauce on the plates, topped with chicken and vegetables. Served additional sauce on the side.
