BAKED TILAPIA WITH TUSCAN CRUMB TOPPING

1 1/2 lbs tilapia fillets
Salt and pepper, to taste
2 tbsp olive oil
1 cup Italian parsley, loosely packed brown sugar
1/4 cup shredded parmesan cheese
1 clove garlic
1 tbsp lemon zest
1/8 tsp pepper

Preheat oven to 400. Sprinkle fillets with salt and pepper. Rub a baking sheet with 1 tbsp olive oil and place fillets in a single layer.

IN a food processor, add cheese, garlic, parsley, zest and pepper. Pulse to roughly chop to a crumb texture. Stir in the additional oil and sprinkle evenly over fillets. Bake, uncovered, for 12 minutes or until fish is fully cooked. Serves 4
