CHILI CON QUESO BITES

4 eggs beaten
1/2 cup salsa, medium or hot
1/4 cup flour
2 tsp chili powder or 1 tsp chili powder, 1/2 tsp cumin and 1/8 tsp cayenne pepper
1 1/2 cups shredded sharp cheddar cheese and/or combined with Pepper jack cheese
1 green onion, chopped

Garnish: Additional salsa and/or sour cream

Preheat oven to 400. Grease a muffin pan. In a bowl, combine first 3 ingredients. Stir in cheese and onion. Spoon about 1 tbsp mixture into each cup and bake for 10 minutes or until golden brown. Serve warm or at room temperature with additional salsa.

NOTE: Freeze well.
