CAJUN CATFISH SAUTE

4 catfish fillets
1 cup milk
2 eggs
1/4 cup creole or brown mustard
2 cups cornmeal seasoned with Cajun seasoning
1/2 cup butter or vegetable oil
Salt and pepper and/or Cajun seasoning, to taste
1 large onion, chopped
1 small bell pepper, chopped
3 clove garlic, minced
Combine milk, eggs and mustard. Dip catfish egg mixture and then in seasoned cornmeal, pressing with hand to thoroughly coat fish. Saute fillets in butter. Turn once and add vegetables to top of cafish. Cover and cook until fish is tender.
