Shelly's Recipe

BANANAS D-AMORE

2 ripe bananas, peeled and sliced in half lengthwise and crosswise
3 tbsp unsalted butter
6 tbsp unsweetened cocoa
5 tbsp brown sugar
Dash vanilla extract
1/4 cup plus 1 tbsp dark rum
Vanilla ice cream-filled chocolate sandwich cookies

Melt butter in a skillet over low heat. Saute bananas lightly on both sides, keeping banans firm; remove to a platter. Remove pan from heat and add cocoa, stirring with a wooden spoon. Slowly add sugar, vanilla extract and 1/4 cup dark rum, stirring constantly. Return to low heat, being careful not to burn the mixture. Add the banans and roll them gently in chocolate mixture. Remove from heat, add remaining rum and flame. Serve on individual dessert plates with ice cream.
