CHILI CON QUESO

1 tbsp vegetable oil
1 large onion, chopped
1 clove garlic, minced
1 tbsp flour and chili powder
1 (10 oz) can tomatoes with chilies
1 lb Velveeta cheese, cubed
2 Jalapeno peppers, seeded and chopped
Taco chips
Heat oil in a saucepan. Add onions and garlic. Saute for 5 minutes. Stir in flour and chili powder (add additional powder if desired). Cook, stirring constalty, for 1 minute. Add tomatoes, continue cooking until thickened, about 5-6 minutes. Reduce heat to low, gradually add cheese. Stir constantly until cheese is melted. Stir in peppers. Taste and adjust seasonings. Serve with chips.
NOTE: For the cheeses, I combine shredded sharp cheddar or Monterey jack cheese along with the Velveeta.
