ITALIAN STYLE SPINACH BAKE

2 tbsp olive oil
1 medium onion, diced
3 clove garlic, minced
1/4 tsp red pepper flakes
1 (10 oz) pkg frozen spinach, thawed and squeezed dry
1 cup grated mozzarella and provolone cheese
1/4 cup grated parmesan cheese

Preheat oven to 350. In an oven-proof skillet, heat first 4 ingredients and cook until onions are just soft. Add spinach and heat through. Top with cheese. Bake for 20 minutes or until cheese begins to brown. Serves 4
