POTATOES BAKE
Category: Hash Brown Potatoes/Casseroles
3 lbs Yukon gold or russet potatos, about 6, scrubbed but not peeled
6 large clove garlic, unpeeled
1 1/2 cups cottage cheese
1/2 cup sour cream
1 1/2 tsp salt
1/4 tsp pepper
1 bunch scallions, trimmed and sliced
1/2 cup grated sharp cheddar cheese
1/4 tsp paprika
Preheat oven to 350. Lighlty coat a 2 quart baking dish with cooking spray. Place potatoes and garlic in a large saucepan cover with water. Bring to a simmer and cook until potatoes are barely tender. Drain and let sit until cooled.
Peel and grate potatoes into a large bowl; set aside. Squeeze garlic cloves from skins into a food processor. Add cottage cheese and process until completely smoothand add to potatoes, along with sour cream, salt and pepper and stirring briefly to combine. Pour into casserold dish and sprinkle with cheese and paprika. Bake for 30-40 minute or until golden brown.
NOTE: Can be prepared ahead and refrigerated until ready to bake.
