POTATO AND PEPPER AU GRATIN CASSEROLE

2 tbsp olive oil
1/2 tsp garlic powder
3/4 lb russet or yokon gold potatoes, thinly sliced
1 red bell pepper, sliced into rings
3 small zucchini, sliced
1 tsp seasoned salt
1/2 tsp thyme and pepper
1/2 cup grated Swiss and mozzarella cheeses
Preheat oven to 350. In a casserole combine oil and garlic powder. Spread evenly over bottom. Layer half the potatoes, half the vegetables. Sprinkle with seasonings and half the cheeses. Repeat layering ending with cheese on top. Cover and bake for 30 to 40minutes or until potatoes are soft and heated through.
