CAPPUCCINO BROWNIES I

2 lbs semi-sweet chocolate chips
1/4 cup instant coffee
1 cup unsalted butter
2 cups sugar
8 eggs
3 tbsp vanilla extract
1 tsp ground cinnamon and salt
2 cups flour
Preheat oven to 375. Place chocolate chips and coffee granules in a double over simmering water. Cover over medium heat until chocolate melts, stirring occasionally. Beat the butter in a bowl until fluffy. Add the sugar gradually and beat constantly and scraping edges of bowl as necessary. Beat in eggs, 2 at a time. Beat for 3 minutes or until mixture is pale yellow. Add vanilla, cinnam and salt and mix well. Beat in the chocolate umixture until combined. Beat in the flour until smooth and creamy. Spoon batter into 4 lightly greased and floured 8 inch baking pans. Bake 35 minutes or until edges pull from sides of the pan. Cool on a wire rack. Chill, covered, for 8-12 hours. Cut the cold brownies into bars to serve.
