BAKED FISH WITH MUSHROOMS AND CREAM

8 tbsp butter
1 lb mushrooms,s liced
1/2 cup cognac or brandy
1 cup canned crushed tomatoes with puree
1 cup whipping cream
4 tsp minced fresh thyme
4 (8 oz) orange roughy fillets
1 cup grated gruyere cheese
Preheat broiler. Melt 4 tbsp butter in a skillet over medium high heat. Add mushrooms; saute until golden, about 7 minutes. Add cognac; simmer until liquid reduces to a glaze. Reduce heat to medium. Add tomatoes, cream and thyme; simmer until sauce thickens; stirring occasionally, about 7 minutes. Season with salt and pepper.
Melt remaining butter in another skillet. Season fillets with salt and pepper. Add fish to skillet; sauce until just cooked through, about 3 minutes per side. Transfer fish to broiler-proof baking dish. Spoon sauce over and sprinkle with cheese. Broil until cheese melts, about 3-4 minutes. Serves 4
