GROUND BEEF POTATO AND CHEESE PIE

1 1/2 lbs ground beef
2 cups Italian bread crumbs
3 cups chopped onions, divided
2 eggs, lightly beaten
1 tsp salt and pepper
2 tbsp olive oil
4 cups shredded frozen hash brown potatoes
1 (8 oz) pkg Mexican four-cheese blend

Preheat oven to 375. Mix together meat, bread crumbs, 1 cup chopped onions, eggs, salt and pepper and press into bottom and up sides of a 10 inch springform pan. Bake for 10-15 minutes.

While meat is baking, heat oil in a skillet. Add remaining onions and potatoes and sauge for 10 minutes, turning occasionally to prevent sticking. Remove meat from oven and fill with potato mixture. Cover with cheese and return to oven. Bake an additional 20-25 minutes or until lightly browned. Remove from pan and cut into wedges.
